Midsummer Salad

This has been a long weekend in Finland, as Midsummer Eve on the 24th is a public holiday. Midsummer food tends to be on the simple side, sausages grilled on open fire being one of the favorites, and for many food is not so important than the more liquid substances. ;) Many left for their summer cottages already on Thursday afternoon and the cities then to be rather quiet this weekend. I'm a city girl myself, not a summer cottage person at all, and I actually hardly ever celebrate Midsummer in any special way other than enjoying the long weekend.

So, there were no grilled sausages for me. Instead I made a nice, fresh salad today.

Midsummer Salad

2 kinds of organic green salad (enough for 2 persons)
half a bunch of organic pea sprouts
1 organic pear, peeled & cut into small cubes
2 organic tomatoes, thinly sliced
2 boiled organic eggs, thinly sliced
4 slices of prociutto
some parmeggiano, thinly sliced
pine & pumpkin seeds
a mixture of olive oil & balsamico for seasoning

1. Shread the greens by hand & set into a large bowl
2. Add the pear cubes
3. Add the prociutto (also shredded by hand into bite size pieces) & the parmeggiano slices
4. Add the seeds & springle with the mixture of olive oil & balsamico
5. When serving, decorate the plates with thinly sliced tomatos & eggs (one tomato & egg per plate)

Serve with some nice white bread springled with olive oil & good quality salt.
