Time flies, my friends! Exactly two years ago today I posted my first recipe here in Cinnamonda. Quite a few recipes later, here we are, celebrating Cinnamonda's second blogoversary! It's been fun, and in addition to Cinnamonda I have since also started a book blog called A Book Blog of One's Own. Thank you all for being such wonderful friends, visiting my blog, leaving encouraging commments -and posting such wonderful recipes on your own blogs! I have learned so much about cooking during these two years! So, here's for many more!

I've been baking some good, old classics lately. It's been so cold outside for many days now that it's just lovely to be inside and bake and let the heat from the oven to warm the whole kitchen! And let the scent of freshly baked cakes to invade the whole house!
The recipe I'm sharing with you today is for a cake that is well known in many places around the world even if its name differes from one country to another. In Finland it is called "tiikerikakku" i.e. the tiger cake.
The Tiger Cake
Recipe from Seitsemän sortin leivonnaiset
200 g butter
2,5 dl sugar
4 dl wheat flour
1 tsp baking powder
1 dl milk
2 Tsp cocoa powder
1 Tsp vanilla sugar
1. Preheat the oven to 200 Centigrade.
2. Butter, or cover with baking paper, a rectangular bread tin.
3. Whip together butter and sugar.
4. Add eggs one by one mixing well between each addition.
5. Add flour, baking powder, and milk. Mix.
6. Remove about 1/3 of the batter into another bowl, add cocoa powder into it, and mix.
7. Add vanilla sugar to the remainder of the batter.
8. Spread half of the batter spiced with vanilla sugar into the bread tin.Then add the batter with the cocoa powder. Lastly add rest of the batter on top.
9. Using a fork pick the batter from various places in order to mix the different batter layers a little, and thus creating some tiger stripes!
10. Bake in the lower part of the oven for 1 hour.
11. Let cool a bit.
12. Enjoy, maybe with a glass of cold milk!
