It's been some months now since I bought my ice cream machine. I have had some moments when I would have liked to rename it "I scream machine" for the trouble I 've had when trying to experiment with some recipes of my own. :) Finally I've come to the conclusion that until my ice cream making skills are on a little bit higher level I just should stop experimenting and stick to recipes that someone else has already found good. And that is exactly what I did last weekend with surprisingly good results! :) I had been baking the whole day and it had been a nice and warm day, so the temperature in my kitchen was not the best for making ice cream, but ice cream I wanted to make! What to do? What to do? Well, I planted my "I scream machine" on the living room floor and let it churn away while I watched the fourth round Wimbledon match between France's Richard Gasquet and Britain's Andy Murray.
This recipe is from the little booklet (Philips ice cream recipe book) I got with my machine. I modified it very, very slightly. :)
Vanilla Ice Cream with Curd Cheese
350 g curd cheese/cottage cheese
2 dl milk
125 g castor sugar
2 dl whipping cream (the original recipe says 1,5 dl)
3 tea spoons vanillin sugar
1. Whip the cream together with the sugars.
2. In another bowl mix the milk with the curd cheese.
3. Add the milk-curd mixture with the whipped cream.
4. Churn in your ice cream machine following the manufacturer's instructions. (With my machine it took 40 minutes before the ice cream was ready.)
The curd cheese makes this ice cream deliciously fresh! I served my ice cream with some "financiers au miel" that I baked following Clotilde Dusoulier's recipe. The recipe can be found in her Chocolate & Zucchini cook book. I used half almond half hazelnut flour in my financiers and made them muffin-sized. Don't they look pretty? :)
